White Bean Soup with Kale

A good friend made this for me and I had to have the recipe.

Ingredients

  • 2 tbsp extra virgin olive oil
  • 1 medium onion, finely chopped
  • 1 finely chopped yellow bell pepper
  • 2 cloves minced garlic
  • 3 tbsp tomato paste
  • 1/2 – 1 tsp dried basil or oregano
  • 5 cups chicken or vegetable stock
  • 1 – 19oz can drained and rinsed white kidney beans or navy beans
  • 2 cups chopped kale
  • salt and pepper to taste

Directions

  1. Combine all ingredients in a large soup pot. Bring to a boil and then reduce to simmer for about an hour.
