A good friend made this for me and I had to have the recipe.
Ingredients
- 2 tbsp extra virgin olive oil
- 1 medium onion, finely chopped
- 1 finely chopped yellow bell pepper
- 2 cloves minced garlic
- 3 tbsp tomato paste
- 1/2 – 1 tsp dried basil or oregano
- 5 cups chicken or vegetable stock
- 1 – 19oz can drained and rinsed white kidney beans or navy beans
- 2 cups chopped kale
- salt and pepper to taste
Directions
- Combine all ingredients in a large soup pot. Bring to a boil and then reduce to simmer for about an hour.
