Black Bean Mango Salsa

This salsa is an excellent accompaniment to fish or poultry, or you can just eat it like a salad.

Ingredients

  • 1 19 oz can black beans
  • 1/2 bunch cilantro
  • 1 lime (juiced)
  • 1/2 red onion, finely diced
  • 1 mango

Directions

  1. Pour the contents of one can of black beans into a strainer and rinse well with water. Put the beans into a medium size mixing bowl.
  2. Chop up the cilantro very finely and add to the beans. Add the juice of one lime to the beans.
  3. Finely dice half a red onion and add that to the mixture. Cut up a mango into small pieces and add that to the beans.
  4. Add some salt, to taste. Start with just a pinch.
  5. Stir it all together and let it rest so that the flavors can meld. The flavors will intensify the longer it sits. It’s best to wait about 30 minutes before serving for this reason.
