Why buy canned tomato soup which is expensive, loaded with salt and probably MSG. Here is a simple recipes that takes minutes to make. You can change the taste by changing the herbs.
Ingredients
- 2 tbsp extra virgin olive oil
- 2 cloves minced garlic
- 1 28 ounce can or 2 pounds fresh tomatoes
- Salt & Pepper to taste
- 1/2 cup half and half cream
- Herb suggestions: 1 tsp dried basil or; 1 tsp dried tarragon or; 1/2 tsp fennel seeds or; 1 tsp dried oregano
Directions
- Heat the oil in a medium pot. Add the minced garlic and herb of your choice and cook over medium heat for about 3 minutes. Add the tomatoes. Use a potato masher, hand mixer or blender to smooth the mixture. Season with salt and pepper.
- You can omit the cream if you don’t want a creamy soup.
