This is an amazing appetizer that always gets rave reviews. The best part is that it is super healthy, but you’d never know it by the taste – so yummy!!
Ingredients
- 2 bunches finely chopped fresh parsley
- 1 (2 oz) can of anchovy fillets, chopped or use anchovy paste
- 3 cloves minced garlic
- 1 1/2 tbsp tomato paste
- 4 tbsp distilled white vinegar
- 1/2 cup extra virgin olive oil
Directions
In a medium bowl toss together all the ingredients. Let sit for an hour for the flavors to meld. Serve at room temperature with a sliced baguette.
